She shared with me this easy and delicious recipe for heavenly fish sticks that is just out of this world.  Perfectly crunchy on the outside &#8211; flaky and juicy on the inside.  She paired this with a fresh and tangy dipping sauce that will send everyone begging for more.  So yummy, I snuck into the kitchen when everyone was fast asleep to enjoy another crunchy morsel &#8230; privately &#8230;</p>

<p style="text-align: left;"><span style="color: #ff3333;">Tonya&#8217;s Crispy Fish Sticks (4 servings)</span></p>
<p style="text-align: left;">1 lb. of organic salmon</p>
<p style="text-align: left;">2 lg. organic eggs beaten</p>
<p style="text-align: left;">1 c. of whole wheat flour</p>
<p style="text-align: left;">1/2 c. of Panko breadcrumbs</p>
<p style="text-align: left;">1/2 c. Italian breadcrumbs</p>
<p style="text-align: left;">1/4 c. parmesan cheese</p>
<p style="text-align: left;">kosher salt to taste</p>
<p style="text-align: left;">fresh ground pepper to taste</p>
<p style="text-align: left;">1/4 c. olive oil</p>
<p style="text-align: left;">
<p style="text-align: left;">Select a nice piece of salmon and have your fishmonger skin it and slice it into even slabs.  Pour the flour into a shallow dish and set aside.  Combine Panko, Italian breadcrumbs, and parmesan cheese in a shallow pan and also set aside ( I am sure adding cheese is breaking all sorts of culinary rules, but que sera sera! )</p>
<p style="text-align: left;">Salt and pepper the fish to taste.  Dip each piece into the beaten eggs, then dredge in the flour, and dip again in the egg mixture.  Dredge each piece for a second time in the Panko mixture.</p>
<p style="text-align: left;">Heat the olive oil in a frying pan and add the coated fish into the pan and sear on each side until just golden.</p>

<p style="text-align: left;"><span style="color: #ff3333;">Tangy Mango Dressing</span></p>
<p style="text-align: left;">1 tbs homemade mayonnaise</p>
<p style="text-align: left;">1 tsp dijon mustard</p>
<p style="text-align: left;">1 tbs mango yogurt</p>
<p style="text-align: left;">1 tsp cilantro</p>
<p style="text-align: left;">
<p style="text-align: left;">Mix all four ingredients together and voila!</p>
