No Bake Sunbutter Cup Recipe ~ by Larisa Braun @larisafbraun

Halloween calls for treats! However, some treats can be a healthier alternative than others. That's why we partnered with our dear friend Larisa Braun (@Larisafbraun) to create these No Bake Sunbutter Cups. We used the Meri Meri cupcake kits found in your Tot Box to help makes these delicious treats perfectly festive for Halloween! These treats are nut free and great for those school Halloween parties. We hope you (and the whole class) enjoy these as much as we did! 

 

INGREDIENTS:

FOR THE BASE + CRUMBLE TOPPING

  • 3/4 cup oats
  • 1/4 cup oat flour 
  • 3.5 Tablespoons virgin coconut oil 
  • 1 Tablespoon SunButter
  • 1.5 Tablespoons maple syrup
  • 1/4 teaspoon cinnamon 
  • 1/4 teaspoon pure vanilla extract 
  • Pinch of fine Himalayan sea salt 

FOR THE CHOCOLATE LAYER

  • 3/4 cup semi-sweet chocolate chips/chunks (I like Enjoy Life dairy free)
  • 3 Tablespoons SunButter
  • Pinch of fine Himalayan sea salt 

 

DIRECTIONS:

  1. Line a cupcake tin with Meri Meri cupcake liners. 
  2. In a food processor, add all of the base ingredients. Pulse to combine until a sticky meal forms. The mixture should still be a bit chunky, but should stick together when you pinch it. If needed, add up to a tablespoon of additional SunButter. 
  3. Press 1T of the oat mixture into the bottom of the cupcake liner. Place in the freezer while you prepare the chocolate layer.
  4. Place chocolate in a medium-sized bowl, then melt it in a microwave in 30 second increments, stirring after each until the chips are just melted. Add the SunButter and salt, then stir to combine. If the SunButter thickens the chocolate too much, melt the mixture for another 15-30 seconds to soften. 
  5. Divide the mixture evenly between the cups. Optionally—for a third layer—top with sprinkles, shredded coconut, mini chocolate chips, or extras from your base layer. 
  6. Freeze for 30-60 minutes until the chocolate is set. Press your Meri Meri cupcake toppers into each cup and serve.
  7. These keep well in the freezer. Simply store frozen in an airtight container for whenever you need a healthy, sweet treat. 

NOTE: If you'd like to forgo the top layer of sprinkles/coconut, you can create a third layer in your cups by making your base layer thinner, reserving the extra to top off your cups.
